It was intended as a presentation dance, and is the version that St. George does. Quite honestly, I went through the construction, and although there are several versions of Spagnoletta, I couldn't match their reconstruction to any of them. So, don't pay too close attention, and just admire the beauties performing it =)

I don't know, it might be a demo dance. There's some PDF descriptions and music on these pages, http://www.sca.org.au/del/ddb/sections/16th_c_italian_dance.html
3 person version: http://www.sca.org.au/del/ddb/sections/16th_c_italian_dance20.html
2 person version: http://www.sca.org.au/del/ddb/sections/16th_c_italian_dance19.html
and some more discussion here: http://www.pbm.com/~lindahl/lod/vol3/spag.html
I think I may have taken a class on the 3-person version at a Pennsic a long time ago, but I'm not certain.
